So… my mom spent some time as a photog in Mexico, especially upon their prison system of justice, and back-in-the-States, even in the 80’s or so, insisted that our typical ‘American attempt at taco night’ should include actual tortilla-press wraps, and by golly, she managed to procure one! (the press, I mean) And they were typically great, either en trigo o maize!
Shit, but one of my biggest regrets, after Mom passed, was in failing to ask the estate for that one special item, as her #1 son. &^!@#$*&!@ it got thrown out in the trash, from what I recall.

I don’t know what it is about mustard-based sauces. Thanks for filling that in. The trading aspect I was thinking about, but wasn’t sure about. Still, as I recall, the French commonly had decent relations with NA’s, and frequently traded with them. And the French would have been in the area, or a bit Northward, I think.
So that might explain how NA’s knew to add the right amount of powder, how to handle it, and that sort of thing.

Excellent. I’ve been having many a nopales salad from the local place, as they’ve been surprisingly tasty. What really ‘tied the room together’ was some kind of mustard-based dressing, which I wasn’t expecting at all…
